pedro at the countryman hotel

hello my name is chris I worked with pedro at the countryman hotel as a commi chef when I was just fifteen years old that was forty five years ago and although I only worked there for one year (it seems I was not cut out to be a chef ) I have never forgot pedro how he took me under his wing as it was my first time living away from home (I stayed in one of the chalets on site ) pedro encouraged me to open my first bank account and to start saving, my wages at the time were nine pounds a week and I would give pedro two pounds of this which he would deposit in my bank in sketty , one of my first impressions of pedro was that he was firm but fair with a leaning more to the fair side than the firm side if I ever made a mistake in the kitchen (and I made many ) not once did pedro raise his voice in anger to me he would just show me where I went wrong and show me how to do it right next time , like the time he gave me a box of frozen trout and told me to put them in the sink and thaw them out which I did with disastrous results apparently you're not supposed to pour boiling water over frozen trout I was left with a sink full of mush ,I think this amused pedro more than anything and he showed me that by running cold water over the frozen fish they would thaw out slowly and nothing more was said about it ,as for his morris minor if my memory serves me right he traded it in for a ford capri and a few weeks later went back to the car dealer to try and get his morris minor back to no avail ,Ionly met pedro two or three times after I left the countryman but he always remembered me no matter how many years had gone by and he was always happy and smiling that was his nature ,he was a man I am proud to have known
